My name is Susan Carter, and I have been baking as long as I can remember. Meanwhile, I did not know anything about economics until I went to college and enrolled in an Intro Economics course. I immediately became enamored with the principles underlying all of the economics concepts we learned. After discovering that I enjoyed teaching economics when I tutored my junior and senior year of college, I decided to go get my PhD. I graduated from Vanderbilt in 2012 and have been teaching at a liberal arts college since then. I often use food related examples in class and finally started writing them down. I eventually would like to write a cookbook!
